These Funfetti Birthday Cheesecake Bars combine the festive vibes of birthday cake with the creamy decadence of cheesecake, making them the perfect treat for any celebration.

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 680 g full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • ½ cup sour cream or heavy cream
  • ½ cup funfetti sprinkles (jimmie sprinkles)

Instructions

  1. Preheat the oven to 175°C (350°F) and line a 23×23 cm (9×9 inch) square baking pan with parchment paper, leaving an overhang.
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until it resembles wet sand, then press firmly into the bottom of the prepared baking pan. Bake for 8-10 minutes until lightly golden and fragrant. Let cool slightly and reduce the oven temperature to 160°C (325°F).
  3. In a large bowl, beat softened cream cheese on medium speed until smooth and creamy, about 2-3 minutes. Scrape down the sides of the bowl as needed.
  4. Gradually add granulated sugar to the cream cheese, beating until just combined. Add eggs one at a time, mixing on low speed until incorporated.
  5. Stir in vanilla extract, all-purpose flour, and sour cream (or heavy cream). Mix on low speed until just combined.
  6. Gently fold in funfetti sprinkles by hand with a spatula.
  7. Pour the cheesecake batter over the slightly cooled graham cracker crust. Tap the pan on the counter to release air bubbles. Bake for 35-45 minutes, until the edges are set but the center has a slight jiggle.
  8. Turn off the oven and prop the door open slightly, allowing the cheesecake to cool in the oven for about 30 minutes. Then, cool completely on a wire rack at room temperature. Cover with plastic wrap and chill in the refrigerator for at least 4 hours, or ideally overnight.
  9. Use the parchment paper overhang to lift the cheesecake out of the pan. Cut into 16 or 24 bars using a sharp knife warmed under hot water.
